🥕 Gajar ka Halwa Recipe
🧺 Ingredients
- Carrots (red/desi) – 1 kg (grated)
- Full-cream milk – 1 litre
- Sugar – ¾ cup (adjust to taste)
- Desi ghee – 4–5 tbsp
- Khoya (mawa) – 150 g (optional but recommended)
- Cardamom powder – ½ tsp
- Cashews – 10–12 (chopped)
- Almonds – 10–12 (sliced)
- Raisins – 1 tbsp
- Saffron strands – few (optional)
👩🍳 Method
1️⃣ Cook Carrots in Milk
- Heat a heavy pan or kadhai.
- Add grated carrots and milk.
- Cook on medium–low flame, stirring often.
- Cook till milk completely evaporates and carrots become soft.
2️⃣ Add Ghee
- Add 2 tbsp ghee and sauté (bhunao) for 5–7 minutes.
- You’ll start getting a nice aroma.
3️⃣ Add Sugar
- Add sugar and mix well.
- Halwa will release moisture again — cook till it thickens.
4️⃣ Add Khoya & Flavour
- Add crumbled khoya, cardamom powder, and saffron milk.
- Mix well and cook for 5–6 minutes.
5️⃣ Roast Dry Fruits
- In a small pan, heat remaining ghee.
- Lightly fry cashews, almonds, and raisins.
- Add them to halwa.
6️⃣ Final Bhunao
- Cook till halwa leaves the sides of the pan and ghee separates.
