Masala Poha

Ingredients

  • Poha (flattened rice) – 1½ cups (medium or thick)
  • Onion (finely chopped) – 1 small
  • Potato (small, finely chopped) – 1 (optional)
  • Green chilli – 1 (finely chopped)
  • Peanuts – 2 tbsp
  • Oil – 2 tbsp
  • Mustard seeds – 1 tsp
  • Cumin seeds – ½ tsp
  • Curry leaves – 8–10
  • Turmeric powder – ½ tsp
  • Red chilli powder – ¼ tsp (optional)
  • Salt – to taste
  • Sugar – ½ tsp (optional)
  • Lemon juice – 1 tbsp
  • Fresh coriander – chopped
  • Sev – for garnish (optional)

Preparation

  1. Prepare poha
    • Rinse poha in a strainer under running water for a few seconds.
    • Drain well, add salt, sugar & turmeric. Mix gently and keep aside.
  2. Tempering
    • Heat oil in a pan.
    • Add mustard seeds → let them splutter.
    • Add cumin seeds, peanuts & curry leaves.
    • Fry till peanuts turn crispy.
  3. Cook veggies
    • Add chopped onion & green chilli. Sauté till soft.
    • Add potatoes (if using), cover & cook till tender.
  4. Mix poha
    • Add prepared poha to the pan.
    • Sprinkle red chilli powder.
    • Mix gently on low flame for 2–3 minutes.
  5. Finish
    • Turn off heat.
    • Add lemon juice & coriander.
    • Garnish with sev.

🍽️ Serving Suggestions

Serve hot with:

  • Tea ☕
  • Coconut chutney
  • Extra lemon & peanuts
