
Masala Poha
Ingredients
- Poha (flattened rice) – 1½ cups (medium or thick)
- Onion (finely chopped) – 1 small
- Potato (small, finely chopped) – 1 (optional)
- Green chilli – 1 (finely chopped)
- Peanuts – 2 tbsp
- Oil – 2 tbsp
- Mustard seeds – 1 tsp
- Cumin seeds – ½ tsp
- Curry leaves – 8–10
- Turmeric powder – ½ tsp
- Red chilli powder – ¼ tsp (optional)
- Salt – to taste
- Sugar – ½ tsp (optional)
- Lemon juice – 1 tbsp
- Fresh coriander – chopped
- Sev – for garnish (optional)
Preparation
- Prepare poha
- Rinse poha in a strainer under running water for a few seconds.
- Drain well, add salt, sugar & turmeric. Mix gently and keep aside.
- Tempering
- Heat oil in a pan.
- Add mustard seeds → let them splutter.
- Add cumin seeds, peanuts & curry leaves.
- Fry till peanuts turn crispy.
- Cook veggies
- Add chopped onion & green chilli. Sauté till soft.
- Add potatoes (if using), cover & cook till tender.
- Mix poha
- Add prepared poha to the pan.
- Sprinkle red chilli powder.
- Mix gently on low flame for 2–3 minutes.
- Finish
- Turn off heat.
- Add lemon juice & coriander.
- Garnish with sev.
